Title: The Characteristic of Monoglycerides and Its Appliction in Flour Products

Abstract: Monoglycerides are a series of emulsifier used in food industry, especially in the flour product processing. Monoglycerides have interfacial activities and they can interact with the ingredients in flour, such as starch, protein and lipid. These characteristics can improve the processing and qualities of the products. This paper summarizes the functional properties and the applications of monoglycerides in common flour products. Besides, we have a expectation of the development of monoglycerides. 更多
