摘要:超微粉碎技术作为一种新型的食品加工方法,已受到普遍关注。本文对超微粉碎加工的基本原理,分类和其特点进行了概述,同时介绍了超微粉碎技术在肉类工业中的应用,发展前景广阔。

Abstract: Superfine grinding,as a new type of food producing technology,is given more attention nowadays.The basic principle,classification and characteristic of the superfine grinding were introduced in this paper,while the application of this technology in meatpacking was summarized too.The technology has bright prospects in the future.
